Fermentation for at least 25% in small French oak barrels, with the wine remaining for a further 6 months in wild yeast during malolactic fermation; for the remaining part, in stainless steel tanks at a controlled temperature of 17°C.
Aging 38 months on yeasts.
Followed by 12 months in bottle.
