For those, instead, who would prefer to savour the traditional cuisine of Etna, Cottanera organizes lunches, dinners and buffets. Booking required.
The catering is personally looked after by Maddalena Cambria, who, with the assistance of some company staff, prepares a rich selection of tasty, ancient dishes taken from traditional lore, accompanied by three of the company's wines. Some of the more popular dishes include pasta with potato, pasta with fresh garden beans, aubergine and pasta timbale, rice timbale with summer vegetables, Etna aromatic herb omelettes, delicious, tiny braciole - meat rolls, with baked potatoes or seasonal vegetables, oven roast lamb with cherry tomatoes and onions. To round off the meal, Nerello Mascalese jam tarts, an old recipe from the Cambria family cook-book, and nut pastries with almonds and Bronte pistachios.
